Add support for Python v3.11

Expected to be release the 24th October 2022.

• Introduce Python 3.11 image generation (docker/python3/poetry#6 - closed)
• Set up v3.11 test job
• Move coverage to v3.11 job
• Set default container to v3.11
• Handle deprecation warning and breaking features: typing.re.Pattern
• Open follow-up v3.12 ticket: #196 (closed)
